Here is another quick recipe that is super healthy, tasty & nutritious. You can have this for lunch or add lamb and turn it into a dinner recipe. Read on to see how I made it and enjoy.
250g of green lentils
1 bunch of spring onions
1 tomato or a handful of cherry tomatoes
1 bunch of fresh parsley
2 teaspoons of olive oil
Juice of 1 lemon
- Rinse and boil the lentils in salty water until they are soft. I like them with a bit of crunch so I take them out a little early but you can boil them until they are soft. Drain and set aside to cool.
- Chop the spring onions, tomato and parsley really fine.
- Mix the cooled lentils with the spring onions, tomato and parsley.
- Dress with olive oil, lemon and salt.
