Quick & easy lentil tabbouleh

Hello everyone!

Here is another quick recipe that is super healthy, tasty & nutritious. You can have this for lunch or add lamb and turn it into a dinner recipe. Read on to see how I made it and enjoy.


250g of green lentils
1 bunch of spring onions
1 tomato or a handful of cherry tomatoes
1 bunch of fresh parsley
2 teaspoons of olive oil
Juice of 1 lemon


  1. Rinse and boil the lentils in salty water until they are soft. I like them with a bit of crunch so I take them out a little early but you can boil them until they are soft. Drain and set aside to cool.
  2. Chop the spring onions, tomato and parsley really fine.
  3. Mix the cooled lentils with the spring onions, tomato and parsley.
  4. Dress with olive oil, lemon and salt.
